Poha - Recipe: Move later

Poha is a breakfast item in Maharashtra, India. Now a days many states eat it in breakfast. We in US eat it even during lunch and dinner. It is very simple to make and very healthy if you put some nuts like peanuts to it. Adding some nuts to it make it a perfect combination of carbs and protein. Adding some veggies to it will make give you your vitamin dose too ;) I sometimes add cabbage(normal or purple), bell peppers/capsicum, and green peas. It satisfies to the core since I get a mental satisfaction that I am eating my quota of vegetables. So let's see how to make it :)


Ingredients:

  • 2 cups of poha/pressed rice
  • ¼ cup of peanuts
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 2 chopped green chillies
  • 10-12 curry leaves
  • ½ chopped medium onion
  • ½ cup chopped carrot
  • 1/4 cup chopped bell pepper/capsicum
  • ½ cup boiled green peas(Optional)
  • ¼ cup chopped cabbage(Optional)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon of coriander powder. 
  • Salt to taste
  • 2 tablespoons of fresh coriander leaves
  • Lemon

Method:
  1. Rinse the poha with water and make sure all the grains are wet. Drain all the access water. Keep it for 10-15 minutes. Later run your hands through the grains to make sure all of them are separated nicely. 
  2. Take a pan/kadhai, heat the oil for 2-3 minutes
  3. Add Cumin, mustard, and fennel seeds. Let it crackle. Ensure to cover the pan with lid so that mustard seeds doesn't sputter. 
  4. Add curry leaves and let it crackle. Cover the pan so that oil doesn't sputter all over. 
  5. Add green chilies, onion, and cabbage(optional). Let it turn a bit brown. 
  6. Then add rest of veggies like bell pepper/capsicum, green peas, and carrot. Let it cook for 3-4 minutes. 
  7. Then add poha, turmeric powder, and coriander. Mix it well. 
  8. Let it cook for 5-7 mins on low flame.  
  9. Serve the hot poha by garnishing it with coriander and sprinkling it with lemon.
